Does anyone know how to remove the leather covered trim around the centre instrument panel on TD/TEs? Do you have to remove the entire wooden dash?

You just need to remove the centre panel ( 4 screws) all the gauges & switch bodies are mounted within the steel panel behind the the veneered ply. Unless its totally knackered ie split , you can simply remove the veneered ply & refurbish in situ .
To do this get some leather dye & protector .
Mask off the veneer ,
Remove the old dye using one of those green abrasive pads & some thinners
remove the residue with a clean white rag ( don't want any colored cloth dye running into the newly virgin leather)
Clean again using alcohol spirit
paint/spray with leather dye
Paint spray with leather (clear) protector
coat with hide protector
Cheers
Alan
